Southwestern Pan Fried Chicken

This is a pretty simple recipe for ‘southwestern style pan fried chicken breast’.

It’s more like an idea for a quick and easy meal.

Ingredients:

  • 1 whole chicken breast, skinless and boneless (two halves)
  • 1/2 teaspoon of granular garlic
  • 1/4 teaspoon of powdered chipotle sauce (Atlantic Spice Co. Cape Cod, MA)
  • 4 tablespoons of corn oil or extra light olive oil to cook the chicken in the pan
  • 1 cup of pureed salsa ( Chef Steve’s Corn & Black Bean Salsa or you may use another type if you must )
  • Salt & Pepper to taste

Preparation and Cooking:

  1. Olive oil in the frying pan
  2. Add the Garlic and Chipotle to the olive oil that is in the frying pan
  3. Add the chicken breasts and flip them until all the garlic and chipotle are on both sides
  4. Cook until almost done
  5. Add the pureed salsa into the pan with the chicken and heat until chicken is done
  6. Take out the chicken and slice into thin slices and set on plates
  7. Spoon out the remaining salsa and spread over the chicken slices
  8. Serves 2-4 depending on the size of the chicken breasts or how hungry you are!

NOTE: Chef Steve’s Corn & Black Bean Salsa makes a great sauce when you puree it. Use it on anything you like!
