This is a pretty simple recipe for ‘southwestern style pan fried chicken breast’.
It’s more like an idea for a quick and easy meal.
Ingredients:
- 1 whole chicken breast, skinless and boneless (two halves)
- 1/2 teaspoon of granular garlic
- 1/4 teaspoon of powdered chipotle sauce (Atlantic Spice Co. Cape Cod, MA)
- 4 tablespoons of corn oil or extra light olive oil to cook the chicken in the pan
- 1 cup of pureed salsa ( Chef Steve’s Corn & Black Bean Salsa or you may use another type if you must )
- Salt & Pepper to taste
Preparation and Cooking:
- Olive oil in the frying pan
- Add the Garlic and Chipotle to the olive oil that is in the frying pan
- Add the chicken breasts and flip them until all the garlic and chipotle are on both sides
- Cook until almost done
- Add the pureed salsa into the pan with the chicken and heat until chicken is done
- Take out the chicken and slice into thin slices and set on plates
- Spoon out the remaining salsa and spread over the chicken slices
- Serves 2-4 depending on the size of the chicken breasts or how hungry you are!
